when adding new recipe in mobile 2.1 I am not able to choose new style (stuck with american amber ale). if it is accidentally default, not sure how to undo.

If you are editing the recipe just click on the style name to bring up a list of styles and change it (recipe must be opened to edit first).
If you want to set a new default for all new recipes, open a new recipe, set whatever settings you like (style, equipment, etc), and then scroll all the way to the bottom of the editing screen and select "Save as Default" to save it as the new default template for future recipes.
