Does it matter which way I mount a plate chiller? Vertically with the beer-out at the top? Horizontally? Laying down with the inputs and outputs facing up?

My chiller is a Duda Diesel so the inputs and outputs are all on one side, and I'd be using a pump. I'm thinking about the possibility of cavitation here; I know it's critical regarding pump-head orientation - would the orientation of the plate chiller also be critical?

Nope.

The pump and water pressure are doing the work. All that matters is that you can get all the air out of both sides in order to keep the heat transfer constant and fully sanitize the wort side.
