Christmas Alw
« on: June 11, 2014, 09:08:07 AM »
I am working on a Christmas ale for my wife and want to see if any one has some advice.  I will be using 50/50 mix of water and fresh apple cider for my mash. I am trying to see what hops to use. I have several in this beer and just cant decide what to use. Also i would like some opinions on how you think this will turn out or improvements I can make.
Like I said this was my wife idea, just trying to make her happy so I get to make more beer

50/50 is too much cider.
I wouldn't recommend cider in the boil. Add a smaller amount to the fermenter; probably around a gallon in a 5G batch but I haven't done the gravity calculations. If I recall, cider is around 1.06
