If you want a banana bomb, add the first half of the grains and make some maltose at 62C, then cool down to 43C (cold water infusion), and add the other half of the grain. 

Then proceed as normal (ideally a double decoction from 43C onwards or just schedule a 20/30 minute rest at that temp).
