What is three stage fermetation?

I use it for Barrel aging sometimes.  I suppose you could for Ice beers.

Could be used for whatever you choose......primary, secondary, lagering OR barrel OR racking a sour onto fruit, etc.
 
In addition to what MaltLicker said, it also points to temperature changes during the fermentation. So, it *could* mean keep the beer in the same fermenter, but vary the temperature.
