Just wanted to know what the correct procedure for getting wort to boiling point is. Should I put the lid on my boiler to help get there quicker or would this have any adverse effect on my boil loss calculations or any other issues that may arise?
boiling with the lid on can produce off flavors, but i typically (for better or worse) put the lid on for the majority of the "approach to boil". when i take the lid off to check on things, i make sure the condensation on the bottom of the lid does not fall back into the pot. once boil/near boil is reached, the lid comes off and stays off. this gets me to a boil more quickly.
