Quick question.

A malted 2 row Crystal has a skin you can remove to get to the grain, is that what you call the chaff or hull?

Why would you prefer to keep than intact after crushing when sparging can cause tannins?  Why not remove it all together to make sparging quicker?

Thanks.

A good crush will keep much of the husk intact.  This husk will from a filter bed to keep much of the finely crushed kernels from getting into your wort.  It will also prevent the grain kernels from compacting and restricting the wort from draining.

Tannin release is a function of too high temperature and too high wort pH.
