I would love it if the timer would keep all the steps visible throughout the brew process. It's really bothersome when the current step disappears as soon as it begins.
Example: I've just mashed in, go to get a drink and come back to check if the temperature has settled down to the right number. What was that number again? Can't tell by looking at the timer anymore because it has disappeared and there's no ability to scroll back up to remind myself.
I'd suggest having the whole process stay up all the time, with just the current one in bold type.
