I am planning a Fat Tire clone.  Five gallons with a 10.5lb grain bill.  I batch sparge using one half the total water and sparging twice.  Beersmith suggests that sparge water to be 187F.  Does that seem high?  In the past, Beersmith has brought my water in at around 180F.

I just do not want to pick up tannins or any other off flavors.

that should be fine.

I use 190 and sparge one time.  No issues with flavor or eff.
