You have a Pale Ale posted as a recipe that does not indicate the yeast you use.  What yeast do you add to your, "An American Ale"?

Hmmm,
  I believe I used california or American ale yeast - something generic if I recall.

I brewed this recipe on Thursday with Maris-Otter 2-row, WLP001 California Ale.  I upped the Centennial Hops to 1 oz and mashed for 90 minutes, instead of 45 minutes.  I got an 85% efficiency into the fermenter.
