If you create a specific water profile using the water tool, save it as a new target profile.  Now open your recipe and click on 'add water' next to the ingredient box on the design tab, select the water target you created (or is in your water targets) and add it to the recipe.  BeerSmith will give you the option of adding any water salts to the recipe as individual ingredients and they will be scaled to the volume of water in the recipe.
