Multi Rest Mash

Brew day tomorrow and I thinking of doing a multi rest mash

As I haven't found anything on this subject on this forum any helpful advice would be appreciated. My only concern is the extraction of harsh flavours while adding water over 80c but since Decoction  mashing is simular this shouldn't be a problem.

Don't worry about the temp because you will be stirring the additions in which will decrease the temp. You should be fine.
