Making pyment with a wine kit

Hey guys. I've been making wine (Winexpert Private Reserve), and I've just started some meads.  I was thinking about the possibility of using another wine kit mixed with honey to make a pyment.  My problem is that I'm not sure how to add those ingredients to BrewSmith.

[*]I see options for adding Wine grape juice. Is that what I want?  It gives several options for BRIX levels. So I'd just use my refractometer to measure the juice that comes from the kit?
[*]The kit comes with grape skins.  How do I enter those?  Just add them as fruit?  Or is there an add-on for grape skins that I don't know about?
