Evaporation Rate High

I boiled 5 gallons of water for 1 hour with a rolling boil on my bayou burner. The water is 136* with 3.5 gallons left. I do not think that is right. I have a 15 gallon megapot.

I was using just enough to get the surface of the wort to break giving me 16-17% loss. Someone thought I should be boiling a little more rapid than that. (That is why I did the water test today)

So do I go with 30% loss or am I boiling to hard? I always hear "You need a rolling boil".

Just went to That video is WAY lower of a boil than what I did.

Which is better, video #1 or #2?

Go with number 2. You need a good rapid boil to get proteins to do there thing? If you just "simmer" the beer you can't get the right break meterial to form. I wish I could remember what it is exactly. I will go have a beer and maybe it will come back to me. And I will get back to you!
