Dandelions and Lemon Balm

Hi,

I've plenty of dandelions and lemon balm at home.

Has anyone ever bewed with any of these ? Should I use the roots, the leaves or the flowers ? Any recipes ?

I have a friend that makes a dandelion IPA frequently, and it's very good.  Her friend made a dandelion stout and it was good too.  It contributes some bittering, but mostly flavor and some aroma.
