I would either create a new style of your own (just go to the styles database and make one with your own name and parameters), or use a wide open style like "Specialty Experimental..."
Also, you can change the default style for new recipes (as well as any other field for new recipes):
- Create a empty recipe
- Change the style and whatever else you want to use as defaults
- Pick the "Save Recipe as Default" on the "Actions" menu
Now whenever you create a new recipe, it will start with the recipe parameters you just set.
