De Konink - Antwerp Ale

De Konink is one of my all time favorite beers...The key to this recipe is getting WLP 515, Antwerp Ale yeast...I've attached an all grain and partial mash...enjoy.

So I took this recipe to the next level (at least I think so)...

I scaled the batch up to 10 gallons and increased the hops to create something I'm calling an Antwerp IPA...

..then split it into 2 5 gallon batches.  I pitched one batch with theWLP 515 (Antwerp Ale) and the other with WLP 500 (Trappist Ale).  I racked them to a secondary and dry hopped with an ounce of Simcoe. 

I tasted both when I racked them to  the secondary, and it is amazing how different each one tastes.  I've attached the recipe...
