Just wondering if anybody has ever made a coopers kit from the liquid extract except either halfed the or removed the sugar and halfed the water and racked over into a 3 gallon carboy for secondary fermentation? I'm not sure how it would turn out.  I can get the kits for $12 so they are very economical to make.

That's the best approach. Just try it. Cheap kits make for good experiments. Once, in my early brew days, I did the opposite. I was making a brew and ran out of propane with too much boil volume left. Yea, it was a weak beer (called it a session) but it was tasty.
