So I just loaded BeerSmith to my computer and was looking at the malt list. Why are the malts just labeled U.S, Belgium or Germany? I have a problem with this there are major differences between malting companies! Also malts that are patented and registered by Weyermann are labeled U.S. I don't think they would like this at all.
I know that the data base can be customized but why start people off with a dumded down grain list?

Click on Add-Ons, and then the green plus sign.  A list of grains by maltster will appear, as well as some recipe paks.

You are correct in that probably no one uses generic grains, as they are all made somewhere by a handful of companies.
