We having been brewing for 4-5 years using a converted keg set up for 11 gallon batches. We use pellet hops and always 2-stage ferment. We usually just drain the wort after cooling into 2 6.5 gallon carboys not caring about removing the spent hops. The thought is since we second stage all the hop material falls to the bottom with the spent yeast. Any issue with this logic?

Also we are doing an IPA including dry hopping at second stage (2 5 gallon carboys). If using pellet hops would we need to adjust a recipe. Most recipes will state the amount of hops used but don't state if they use pellet or leaf. Just wondering if the amount is the same for both?
