Hop Age Tool

How are you using the hop age tool with nitrogen flushed foil bags?

If I have a 5KG pellet bag from the 2012 crop, and I open it in April, is that a "fresh" bag, or do I use the hop age tool and count a number of months from.... (when?) When it was picked, when it was peletized?

I have an unopened 5KG bag of nitrogen packed 2011 Saaz. If I open that, how do use the hopg age tool? Is that 18 months old, or fresh whne I open it?

Even in nitrogen, hops oxidize and age.  Myself and everyone I know always go by the harvest date. 
 
Hi,
  I would personally treat it as a vacuum packed foil bag in the tool.  As others point out the hops will age with time, even if put in a vacuum or nitrogen sealed bag, though certainly they will decay slower than in air.
