John is the author of the top selling book How to Brew as well as Water and Brewing Classic Styles (full disclosure: Amazon affiliate links used for books). John joins me this week to talk about water in beer.

John joins me for episode #300, and we briefly discuss his 19 appearances on the podcast, starting way back on episode #3 in 2010!

John introduces the “state of the art” in homebrewing, and we talk briefly about the recent episode with John Blichmann and how both equipment and knowledge in homebrewing has evolved these last 30+ years.

One trend we’re seeing is the move to smaller batches and all-in-one BIAB style systems. John and I discuss why this is happening and what the trend means for homebrewers.

Another trend John discusses is the evolution of adjuncts in beer and also how the use of adjuncts has changed over time in recipe formulation.

We discuss the overuse of caramel/crystal malts and how this too has changed over time.

John talks about Hazy IPAs and shares some tips on making Hazy IPAs.

We talk about the trend to “IPA everything” and how most beer styles are not IPAs and require a different approach to hopping.

John introduces “pseudo lagers” and how lagers are seeing a resurgence both in home and craft brewing.

We discuss John’s five brewing priorities and he goes into each in some detail: 1) Sanitation, 2) Sufficient yeast pitching, 3) Fermentation temperature control, 4) Strong long boil and 5) Good receipt proportions.

John shares that he has a new smaller book coming out in Spanish and we discuss when and where that will be found.

John shares his closing thoughts.

Sponsors

Thank you to our sponsor Craft Beer and Brewing Magazine for sponsoring this episode.
