Here's an old recipe I dug out of my log book -- came out quite well and I may brew it again soon...

A Bavarian Weizen...5 gallon all grain...

Amount Item Type % or IBU
5.00 lb Wheat Malt, Ger (2 SRM) Grain 55.6 %
4.00 lb Pale Malt (2 Row) Bel (3 SRM) Grain 44.4 %
0.50 oz Tettnang [4.4%] (60 min) Hops 8.3 IBU
0.50 oz Tettnang [4.4%] (30 min) Hops 6.4 IBU
1 Pkgs Weihenstephan Weizen (Wyeast Labs #3068) Yeast-Wheat

Have you ever tried Wyeast 3056?  I never had, but I've herd it gives the beer a nice bubble gum flavor.
 
Nope,
I've only used the Weihenstephan yeast before which is pretty heavy on the bannana-clove flavor.

 I'm always interested in something new - but I'm not sure bubble gum is exactly what I would be looking for.  Are we talking about a "Big Red" type bubble gum flavor or just a hint?
