Adding fermentables from data sheets

When adding a new grain, I want to use the manufacturer's data sheet. Typically, the sheet lists minimum and maximum parameters (color, protein, moisture, etc). What is the suggested number to enter into BeerSmith? Min? Max? Average? Other?
