I'm looking at a recipe for Anchors Christmas ale. It calls for 4 lbs Alexanders pale malt. Apparently it is still available ( for pickup only in NY state ) but not at my local home brew store. I do have 3.3 lbs of pale malt leftover from my uncle. I'd use that but then I'm .7 lbs short. I could use that up and add 1 lbs Briess pale ale DME. Or just use the 4 lbs DME. The aside item to this is that when I move everything to the carboy for fermenting I use 5.5 gallons so that I come at least close to 5 gallons when I keg it. Anybody have any thoughts on this? The AI summary has all sorts of thoughts such as DME has more fermentable sugars, water level, use 3.2 lbs DME.
thanks

Thanks GF,
That confirms my line of thought. It keeps the flavor of the LME in tact for the most part and the extra DME bumps up the fermentable sugars to keep the AVB in tact.
