BIAB Recipe view and Brewsheet

Hello,

Just purchase Brewsmith a couple days ago and I have just starting exploring it. I want to try brewing one of the sample recipe that came with the program (dry stout) using the BIAB method. I have a 40L pot and hope to make a 18.9L batch (5 gallons). I choose Single Infusion, Full Body, No Mash Out. 

The problem that I have is with the brewsheet instructions for water, The brewsheet specifies;

Prepare Water (25.30 L total)
Amount Item Type
10.00 gm Gypsum (Calcium Sulfate) (Mash 60.0 min) Misc
18.93 L Dublin, Ireland Water

Mash In: Add 9.46 L of water at 79.0 C for 45mins
then Sparge with 15.84 L of 75.6 C water.

With BIAB, should I use 25.3 L all at once? Which of the above temperature should I use?

            In BIAB you use all your water at once. So really for a final result of 5 Gal? plus the water lost to the boil and a small amount to the grain bag. The average temp of the mash varies per recipe somewhere around 153 F. Check it out at  http://www.biabrewer.info
