Changing Mash Parameters

Hey All, apologies if this has been asked a million times..... How do I set up different mash parameters? ie changes in grist ratio, mash pH, temerature etc?

Most of the ones you would want to change are available if you double click on an individual mash step. From here you can set the water/grain ratio and temperature individually for any step. You can do this within a recipe from the Mash tab in the recipe or alternately you can edit and create new mash profiles from Profile->Mash view.
