Another fantastic podcast. One question i would have liked to have posed, was are you having to think about proportions of the different yeasts that are being co-fermented.
 
We did not discuss that - I think most brewers use a 50-50 blend, but I guess you could consider using a small amount of a given yeast though I think you would still get a mix of flavors.
 
I was talking with several people and they were saying that it maybe better to start out with one yeast...let it get going then add in the second yeast, say WLP099 to get the last of it. Not sure if starting off a fermentation with a yeast that can only go to 10%abv with a sugar content that has the potential for 18% would be good for that yeast. What i have done, and it worked out well, is start a fermentation with a 9%abv potential and then feed it sugar along the way and change the yeast early on. this worked
