Fermentation Issue

I recently brewed a Lime Ale using fresh lime juice. The fermentation was explosive. The gravity was correct and my fermenters are stored at 65°. I used a blow off bucket and had to keep dumping the water.

I let everything sit in sit in the primary for two weeks and then bottled. The bottles should be ready by now but there is no  carbonation and the beer is sweet like it was not finished fermenting.

Can the yeast be Volcanoed out and leave beer unfinished? what can I do now?
