Has anyone written / seen something akin to a "how to" start a brewery?  Seems this would exist somewhere?
 
"professional"..."for dummies"... seems like a contradiction to me.  But hey, I'm further towards the latter.

HaHa Agreed but...from the perspective of the hordes who say "I've found brewing and it's now my passion" I'm wondering what the undertaking involves in setting up a craft brewery?

I second this suggestion. Cantwell's book is a step by step guide by one of the industry greats.

The funny thing about going pro is that the recipes and actual brewing are the easy part. Owning a brewery usually means giving that up to someone else.

Absolutely — there are lots of guides and books on how to start a brewery. People often recommend brewing business guides, industry blogs, and books that cover everything from permits to equipment and marketing. Definitely worth seeking out community recommendations and real-world experiences before diving in!
