Operating on a 2000L (17.04bbl) brewhouse. We have to manually add 1.5 to 2 degrees (celsius) to our strike water temp to get the mash temp we need. Where should I tweak my setting for this to be more accurate?

If you have entered in the actual grain temperature and your mash tun weight is accurate, the next place to make the adjustment is in your Mash Tun Specific Heat. You can make an adjustment in this until the predicted strike temperature matches the actual you need for your system.

Yes,
Typically this adjustment is done by tweaking the specific heat until you get the temps you want. Driving it higher should raise the mash in temps calculated.
