I created a recipe and chose "Single Infusion, Medium Body, Batch Sparge" for the mash profile. In the brew steps it shows the following for the sparge: ◯ Batch sparge with 3 steps (0.14gal, 2.26gal, 2.26gal) of 168.0 F water Shouldn't it be one step?

Not when you have the "equal Batch Sizes" box checked and the total preboil volume exceeds your mash tun capacity with one step. The batches are based on what you have in the equipment profile for mash tun size and preboil volume.

Batch sparging is not limited to just one batch. You have to fill the kettle and multiple batches help you increase efficiency.

The infusion hits 1.25:1 water ratio. The sparge instructions are telling you to add water to the mash before draining, then doing two batches to fill your kettle.
