I really enjoy ales or barleywines with a dried date, fig or other earthy dried fruit flavor.  I have been looking for a recipe to copy this flavor profile.  Any suggestions on grains that will give that date/nut bread kind of flavor?

For the dark fruit flavors, look at Caramel/Crystal malts at 90L, 120L, 150L; also Special B.  If you can get them, the British crystal malts generally have stronger dried fruit flavors.

For the nut bread type of flavors, I use pale chocolate malt or brown malt.
