I have one of the RT600C and recommend them. Especially at this price.
 
noticed I have a trc-600 sitting out in the garage yesterday. I think I used it once when I got it a couple months ago and determined it was fast/accurate enough to replace the thermapen. I wonder if there is a side-by-side comparison out there... I think it uses the same exact sensor and the only difference is the certified calibration, much larger screen, and fold-out probe.

For the mash I use the Therma-K handheld with the 113-372 thermocouple wire probe. The probe wire is small enough to sit in the mash with the lid on tight while the handheld sits on top. Very accurate. Kinda pricy, but it's the only one you'll ever need to buy. I went through 2 cheap probes before getting a Thermoworks.
An excellent company with great customer service.
