Greetings. I am fairly new to the brew world and am going to try making some pilsner/lager brews. During the winter months, I have 2 basement rooms that I can manipulate to keep cold temps. After reviewing some recipes, it appears some require a 2nd fermentation, while some don't. Any input on this issue would be greatly appreciated. Thanks.

Are you talking about recipes that tell you to rack to a secondary?

If you're going to let the beer lager longer than about 3 weeks, racking is a good idea because it'll prevent autolysis (which can taste like beef broth or miso soup).

Thanks for the reply. Much appreciated
