What does "Sparge with 4 steps(drain mash tun, 1.5 gal, 1.51 gal, 1.51 gal) of 168.F of water"?  Can someone explain the 4 steps?  Thanks!
 
Those are batch sparge numbers. More than likely, you have the "use equal batch sizes" checked.

The volume is related to the equipment profile. How big your mash tun is and how much you want to boil are factors.
