Nettle ginger beer, which yeast to use??

Nettle-Ginger Beer:

2lbs of young nettle tops
1 gallon of water
1tsp of ground fresh ginger
8 oz. soft brown sugar
1tsp fresh yeast
1/4 slice of toast



boil nettle tops for in water for half an hour.
strain or filter muslin cloth .
put in fermentation vessel or bin.
add sugar,and ginger, stir to dissolve.
put yeast on toast. float on top.
Cover and let sit for 72 hrs,
64deg to 75 F deg best don't move.
After strain and shiphon to glass container
for 7- 28 days.
strain again and bottle.

Why to raft the yeast on bread??
should I use a solid yeast or liquid??
any which yeast should I use??

I am fair new to brewing beer. Im think about using steam beer yeast  :810 for this.

any one which have any suggestions?

Scoby , do you mean a Kombucha colony or mushroom?? Beer Nut??

Kombucha SCOBY would make a nice drink of the nettles and ginger.  I make a ginger beer with a SCOBY and it turns out really nice.
 
Update on my 2 test batches.
My hopped verion fail! drop the yeast to high temp. and to much oxidation. smelled like nail polish! yukkkk!!!!

Second batch came out good taste like a week ginger beer. ( without hops)  (1 gallon)
I will taste a bottle 2 week after bottling. see if taste better on not.  (1 gallon)

I used american ale yeast #01. (dry yeast)

Im learning from my mess ups!


My next beer will be a extract kit northern nut brown ale. five gallon!
