Does anyone know how much water is absorbed with a pound of grain?

A typical value is about 1 fluid oz per oz of grain.  It really depends upon your particular system and you should measure the water in versus the water collected pre-boil (less any dead space in your mash tun.)  You can set the value in BeerSmith to reflect your actual values under 'options' >> 'advanced' >> 'Grain Absorption'

For me, I calculate 0.125 gallons per pound of grain.

That's for my system. YMMV
