Mash rest only 40 minutes?

Hi

As I set up some recipes in Beersmith, I am finding my brewsheet directions indicate holding my mash heat at 167 degrees for 40 minutes.  Should that not be an hour?

I want to set the system up for single mash infusions with batch sparging.  Any tips for making certain I get this right?

You can adjust the mash time by changing the step time from 40 minutes to 60 minutes from within the mash profiles details screen.

Some people will only mash for 40 minutes if using high enzyme malts but the majority of brewers will mash for 60 minutes.
I would go with 60 minutes to ensure complete conversion.
