Boil Duration

I have a question that may seem obvious to some, but not me.  What actually determines the boil duration? I know and understand one hour is the minimum magic time for killing off all bad bacteria and such.  But I have seen some recipes that call for a boil time of up to several hours! Why? What is the purpose behind that?

myself, being a KISS brewer, I don't typically go above 60 min.
