Drowning in Honey...Mead may save us

Kathy and I are new beekeepers. This spring we set up 2 hives in our backyard in north central Texas. We were just trying to get the bees to survive and didn't count on the flood of honey.  The spring honey is beautiful amber and our fall honey harvested yesterday is very dark and thick like molasses! The flavors are distinctly different and both taste great. We have over 5 gallons on hand. 

We'd like to try making some mead and would appreciate any guidance.

Get yourself a copy of "The Compleat Meadmaker" by Ken SChramm and you will be all set (and no I did not spell it wrong).
