Adding grains to Beer smith calculations

I am trying to add a local grain into beermsith.  I am not sure how to take the information they gave me to calculate the numbers in adding a grain.  Obviously I can get the moisture and protein but how do I calculate the other 4 fields?

Yjr specs you have are their targets. Actual specs will vary with each malt lot, but the targets are perfect for knowing what to expect.

Protein: Protein field
Moisture: Round this to 5%, in the moisture field.
Extract: Yield field. The extract will be automatically calculated.
"2.1" use in the color field.

The rest can stay as default. You should contact them and ask what the diastatic power of the malt is. This is the enzyme potential of the malt and is a spec they keep.
