I have a Belgian triple I brewed that's been carbonating for three weeks at 10 PSI at about 42 F in a corny keg. I do t want to tap it yet, I want to let it sit for a few months as recommended by many other brewer friends of mine. My question is do I simply disconnect the co2 and keep the keg cool? Or can I take it out and let it sit at room temp?

I am not sure of the proper storage.  I recently brewed a Pliney the Elder clone.  I kegged it with 8 PSI and then stored it.  My goal was to remove all oxygen from the keg.  I disconnected it from the CO2 tank and stored at low temps.  When I wanted to serve the beer I forced carb at 20 PSI for 2 days and turned down the PSI to 8 for serving.  Had no problems.

Cheers!!
