I can not (yawn) seem to find where I can change the grain pounds to water ratio. Where can I find it? Thank you in advance.
 
Are you talking about where you change the water per lb of grain during the mash?  If so open your mash profile and click on the mash step itself.  There is a water to grain ratio box in there.
