I usually add zest into the whirlpool at the end of the boil and just before chilling. You can add it into the fermenter, but you will need to either freeze it or mix it with a little bit of vodka or grain alcohol to sanitize it first.

Yep last thing you need is to screw up a batch of beer . Generally the only fruit I use is those homebrewers canned fruit that have been pre sterilized and are ready to go.
