Can I change the default carbonation profile to keg? How about changing the default fermentation profile too?

Greetings Kevin -what I have done is created two templates, one for ales and one for lagers.  The templates both include exactly what I need them to include, except without the grain, hops, or yeast.  Then, if I?m brewing a Lager, I simply select the Lager template, copy and paste it, open the one of them and start editing.

There may be easier or better ways of accomplishing your goal.  This is my approach.
