Grand Cru recipes?

Anyone have a solid recipe for a nice Belgian Grand Cru, such as the Allagash?  I'm buying Wyeast Forbidden Fruit for it and wanted ideas for the grain bill.  Thx.
 
The only Grand Cru I have is based off a friends Grand Cru that I like. I think I would change the recipe and use less Coriander. It took a while to mellow out.
