I live in an apartment, and have been brewing the Edelweiss recipe from ?Brooklyn Brew Shop's Beer Making Book?. I like it because after three days of Fermentation, you bottle it and forget it (No Priming required). It?s great for apartment living because I don?t tie up the valuable count space for very long and family has less time to mess with my brew.
The downside, it is not very tasty (Don?t miss understand me, Beers Beer and I Drink the hell out of the stuff).
Does anybody else have any idea or recipes that I could try with this speed?
Could I do this with any brew?
Seems like the Yeast would be a big factor?
Am I risking a atomic change Bottle explosion?

1lb Pale Wheat Malt
1/2LB German Pilsner
.4lb Munich Malt
.08lb Melandidian Malt
Centennial .08oz at start
Centennial .08oz at 30
Amarillo .04oz at 58
White Labs Hefeweizen (wheat ale yeast) is called for, but I often substitute.
