What is the correct mash profile when using fly sparging?

You should be able to use any profile that doesn't have the words 'batch sparge' in the title (notwithstanding your ingredients or beer style naturally!)

If you just want to brew 'simply' (i.e. add water, add grains, wait, then sparge) then choose something with 'Single Infusion' in the title. :)
