When i'm creating a new recipe and go to add grain, it will only let me add fermentables to be used in the primary fermenter in the "Use In" drop down - i'm not able to select grains to be used in mash, or anywhere else for that matter.

That is very odd - in BeerSmith 3 you should be able to display the drop down and it will show a variety of options. Are you on the desktop version of BeerSmith 3 and also what version number (from Help->About)?
